What is nanyang kopi?

Nanyang kopi is Southeast Asia's own style of coffee — dark, thick, faintly smoky-sweet, and unlike anything served in a European café. If you've had a cup at a Singapore kopitiam, poured from a sock filter into a thick porcelain cup, you've had nanyang kopi.

The roast is the whole story

Most of the world roasts coffee beans plain. Nanyang roasting doesn't.

The green beans — usually robusta, prized here for body and punch rather than the delicate acidity that specialty coffee chases — go into the roaster together with sugar and a little margarine. As the heat climbs, the sugar melts, caramelises, and coats every bean in a dark, glossy shell.

That coating does three things:

  • It seals the bean. Less oxygen contact, slower staling.
  • It caramelises rather than burns. What tastes "burnt" in nanyang kopi is caramel taken to its darkest edge, not scorched coffee.
  • It builds body. The result brews thick enough to stand up to condensed milk without disappearing into it.

The technique travelled with Hainanese immigrants to Singapore and Malaysia — Nanyang (南洋) literally means "the Southern Ocean," the old Chinese name for this region. It has a close relative in Spanish torrefacto roasting, and the question of how the two are related is more interesting than it first looks.

A technique with relatives

Roasting coffee with sugar isn't unique to the Nanyang. Spain does it too, and calls it torrefacto — a coffee merchant in Badajoz, José Gómez Tejedor, filed a patent for a sugar-roasting process there in 1901 after seeing miners in Latin America use sugar to stop their beans going rancid underground.

The motives were the same ones a roaster faced in Malaya: keep coffee alive without refrigeration or airtight packaging, and stretch an expensive ingredient with a cheap one. Whether the method travelled from one to the other, or was simply worked out wherever the same problem arose, is a longer story than this page can hold — and one we're still researching.

What matters for the cup in front of you is that the sugar roast is not a shortcut or a way of hiding poor coffee. It is a deliberate technique with its own logic, practised for well over a century, and it produces something a plain roast cannot.

Then it's brewed strong

Nanyang kopi is brewed in a long cloth filter — the "kopi sock" — with near-boiling water, at a dose far heavier than a drip coffee.

Strong, thick, and built to be cut with sweetened condensed milk. That's why kopi tastes right with milk and sugar in a way that a light specialty roast never quite does.

How to order kopi in Singapore

The ordering system looks like code until you learn the four or five words behind it. It's Hokkien, Hainanese and Malay, stacked.

One thing worth noticing in that list: the tea in a Singapore kopitiam is Ceylon black tea, not Chinese tea — even though the people who built the kopitiams came from China. That's a legacy of the nineteenth century, when the British established tea plantations in India and Ceylon and reshaped where the region's tea came from. By the time the kopitiam menu settled into its present form, Ceylon dust was what a trading port had cheapest and closest to hand. We still brew Ceylon dust for exactly that reason.

So Kopi C Siew Dai is coffee with evaporated milk, less sugar. Teh O Kosong Peng is iced tea, no milk, no sugar. Say it in that order — drink, milk, sweetness, temperature — and any uncle will know exactly what you mean.

What does "nanyang" mean in nanyang coffee?

Nanyang (南洋) means "Southern Ocean" — the historical Chinese term for Southeast Asia. It refers to the regional roasting and brewing style developed by Chinese immigrants in Singapore and Malaysia, not to a place where the coffee is grown.

Why is nanyang coffee roasted with sugar?

Torrefacto was patented in Spain in 1901; whether the technique reached the Nanyang from that lineage or was worked out independently isn't settled. The finished drinks are quite different: torrefacto is usually blended with plain-roasted beans and pulled as espresso, while nanyang kopi is brewed heavy through a cloth sock and served over condensed or evaporated milk.

What is the difference between Kopi and Kopi C?

Kopi is made with sweetened condensed milk. Kopi C uses evaporated milk with sugar added separately, so it tastes lighter and less syrupy.

What does siew dai mean?

Less sweet. Pair it with any drink — Kopi Siew Dai, Teh C Siew Dai. For no sugar at all, ask for kosong.
